Menu Plan Monday

Our move was the most disorganized mess I have ever had.  Thankfully, we are in the new house.  Things are still not unpacked.  Things did not get culled before moving, which means that there is still a lot of stuff to go through to determine what we want to keep and what we want to get rid of.  But, our beds are up, the toys are out, and the kitchen and home office are in use.  So, the fundamentals are there and the rest will have to come in the future.

I have done a few posts over the last month but not many.  Now, that we are somewhat settled, I want to get back to blogging on a regular and consistent basis.  Yea for me!  Hopefully, yea for you!

This week, I will be posting in several weekly memes such as Menu Plan Monday, Wordless Wednesday, and Thursday Thirteen.  Additionally, I have a new series that I have been working on for the last 4 weeks I want to roll out.  It is about what has happened in my life in recent years and what led up to our move.

For those of you who have stuck with me, thank you! For those of you who are new, I hope you enjoy what you see.  For everyone’s ease, I have added a content guide, which you can access guide from the new tab on the top of my pages.

Breakfast Menu

Monday: Grits and Eggs
Tuesday: Muffins
Wednesday: French Toast
Thursday: Waffles
Friday: Oatmeal

Dinner Menu

Monday: Homemade Pizza
Tuesday: Corn and Bacon Soup and Salad
Wednesday: Salmon Patties, Homemade Biscuits, and Green Beans
Thursday: Chicken Pot Pie (I plan to make an extra large batch of this to freeze for later.  It freezes really well.)
Friday: Chili and Baked Potatoes (Another recipe I plan to make an extra large batch to freeze for later.)

    So on the chicken pot pie, how much of the filling do you freeze to fill one pie? Thanks for the menu plan and the recipes!

    Lisa,

    We freeze enough to feed our family of 2 adults and 2 5-year olds. For us it usually 4 – 5 cups of filling. When we freeze it, we use a gallon size ziploc bag and freeze it thin and flat. You may have to 1/2 the crust before cooking that amount.
