Salmon Patties

Ingredients:

  • 1 can salmon (15.5 ounces)
  • 1 medium onion, finely chopped
  • 2 large eggs, beaten
  • 1/2 cup crackers (saltines or ritz crackers), finely crushed
  • 2 tablespoons butter

Directions:

  1. Drain salmon.
  2. Place in a bowl and break apart with a fork.
  3. Mix onion, eggs, and crackers thoroughly into salmon.
  4. Shape the mixture into patties.
  5. Melt butter in skillet over medium heat.
  6. Brown each salmon patty on both sides, approximately 3 – 5 minutes on each side.
