Grilled Stuffed Zucchini

Ingredients:

  • 1/3 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 4 ounces feta cheese
  • 1 clove garlic, minced
  • 2/3 cup bread crumbs
  • 2 tablespoons pine nuts
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh thyme, chopped
  • 4 zucchini, halved lengthwise
  • 2 tablespoons olive oil
  • salt and pepper to taste

Directions:

  1. Combine tomatoes, cheese, garlic, bread crumbs, pine nuts, basil, and thyme.
  2. Scoop a trough in the center of each zucchini half.
  3. Brush zucchini halves with olive oil.
  4. Season zucchini halves with salt and pepper.
  5. Grill zucchini cut side down until grill marks form – about 5 minutes.
  6. Turn zucchini and grill lightly on other side.
  7. Remove zucchini from grill and stuff with filling.
  8. Wrap stuffed zucchini in foil and return to grill.
  9. Grill until zucchini is soft and filling is warm – about 15 minutes.
