Now that the primaries are over in Georgia, I am back to menu planning and cooking on a regular basis.  At least until the General Election in November.  We are trying out a new zucchini recipe this week. I think it will be good.

Ingredients:

1/3 cup sun-dried tomatoes, packed in oil, drained and chopped
4 ounces feta cheese
1 clove garlic, minced
2/3 cup bread crumbs
2 tablespoons pine nuts
1 tablespoon fresh basil, chopped
1 tablespoon fresh thyme, chopped
4 zucchini, halved lengthwise
2 tablespoons olive oil
salt and pepper to taste
