Jen’s All Time Favorite Food – BBQ Chicken

This is my all time favorite food.  It is not the traditional BBQ in the Southern sense of the word.  It is grilled chicken with the most delicious sauce.  We usually have this with corn on the cob and baked beans. 

When I was in college, my mom would cook whatever I wanted on the weekends I went home.  I always chose this meal.  It is her recipe.

When Mr. Right and I cook this for a dinner party, we inevitably get asked what the recipe is.  So, if you have been to our house and want the recipe, here it is.

The cooked chicken and sauce will freeze if you make a large batch of it and actually have leftovers.  Usually, when we freeze we cut the chicken into smaller pieces to speed up defrosting.

Ingredients:

  • 8 pounds chicken
  • 3 cups vinegar
  •  ½ teaspoons salt
  • 1 ½ tablespoons yellow mustard
  • 4 ½ tablespoons catsup
  • 9 tablespoons lemon juice
  • dash black pepper
  • 9 tablespoons butter
  • 6 tablespoons sugar
  • 3 ½ tablespoons mustard
  • 3 ½ tablespoons worcestershire sauce

Preparation Marinade:

  1. Mix vinegar through black pepper together. 
  2. Put mixture over chicken, pierce chicken to penetrate.

Preparation Browning Sauce:

  1. Mix butter through worchestershire sauce together over low heat until well blended.

Preparation Chicken:

  1. Grill chicken. 
  2. First half of grilling, use marniade to coat chicken.
  3. Second half of grilling, use browning sauce to coat chicken.
  4. Serve with browning sauce.
