 Happy Valentine’s Day!  Are you cooking anything special this week to celebrate Valentine’s Day? I plan to make Heart Shaped Vanilla Bean Cupcakes and Sour Cream Sugar Cookies with GigglyGirl and BusyBoy.

Tuesday:  Chicken Pot Pie

Vanilla Bean Cupcakes with White Chocolate Buttercream Frosting

Cupcake Ingredients

1 vanilla bean

1 1/2 sticks unsalted butter, softened

1 1/2 cups plus 3 tablespoons sugar

1/2 cups plus 2 tablespoons sugar

3 1/2 cups pastry flour

1/4 teaspoon salt

1 tablespoon baking powder

1 3/4 cups water, room temperature, divided

6 large egg whites

Cupcake Directions

Preheat the oven to 350 degrees.

Sour Cream Sugar Cookies & Frosting

Cookie Ingredients

1 cup white sugar

1 cup butter, softened

3 ounces cream cheese, softened

1/2 teaspoon salt

1/2 teaspoon almond extract

1/2 teaspoon vanilla extract

1 egg yolk

2 1/4 cup all-purpose flour

Cookie Directions

In a large bowl, combine the sugar, butter, cream cheese, salt, almond, and vanilla extracts, and egg yolk.

Beat until smooth.

Stir in flour until well blended.

Separate dough into thirds.
