Spicy Gingerbread Cookies

Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup shortening
  • 3/4 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 egg, beaten

Ingredients for Frosting:

  • 3 cups powdered sugar
  • 1/3 cup butter, softened
  • 1 teaspoon vanilla extract
  • food coloring

Directions:

  • Combine flour, baking soda, salt, and spices; set aside.
  • Blend together shortening and brown sugar until light and fluffy.
  • Beat in molasses and egg.
  • Stir in flour mixture just until combined.
  • Refrigerate at least overnight.
  • Divide dough into 4 portions.
  • Roll out each portion to 1/4 inch thickness on a floured surface.
  • Flour cookie cutters and cut into desired shapes.
  • Arrange on greased baking sheets.
  • Bake at 350 degrees for 10 – 12 minutes.
  • Let cool on wire racks.
  • For frosting, beat all ingredients until fluffy.
  • Decorate as desired.

Makes 4 dozen.
